From the introduction: “At all times amongst the uninhibited aristocracy — and at most times throughout leisured society in general — it has been fashionable to display an educated discrimination in the choice of Food, but it is I think peculiar to the present time that the practice of Cookery should have become as proper a subject for cultured conversation as politics, art, or contemporary scandal. It is of course largely the war which we must thank for this admirable phenomenon. The contriving of meals then became for everyone a matter of constant concern, and the simultaneous absence of domestic labour enabled our leisured class to get its feet in the kitchen door — a position from which it now seems unwilling to retreat.
